Leeks can be an overlooked vegetable, often only eaten as part of a soup made with potato but February sees them come into their own. I definitely don't add them to my shopping basket as much as I could so this month I'm getting them in on the action. Below I've shared a variety of yummy sounding recipes that put leek centre stage. I don't know about you but I love the idea of leek as a pasta alternative and I can recommend from first-hand experience this mushroom, leek, walnut and Roquefort pie by Joanna Weinberg.
